Campfire Fried Donuts

A couple years ago we started making these fried donuts while camping. Now it’s our family tradition, and they just keep getting better and better ! Camping alone is enough to get super excited about but knowing one morning we will have these crispy sugary donuts… well, we all really look forward to that the most I think! Pair it with a cup of hot coffee from the percolator and you have perfection.

This past weekend we went up to Cripple Creek, CO to camp for the long weekend and had a blast! ( check out some of the photos from our trip at the bottom of this post)

We made these delicious donuts for the whole group and everyone loved them!

What you will need:

  • a (seasoned) deep cast iron skillet
  • oil
  • 2-3 tubes Pillsbury flaky or original biscuits
  • an empty beer bottle
  • tongs
  • paper bag
  • cinnamon and sugar

We use this grate to cook on over the campfire and heat the skillet for a bit with some oil in it. I don’t really measure it, but I am guessing it’s about 1 cup. When the oil is starting to slightly simmer and bubble that’s when you know it is ready. While the oil is heating up, you can get the dough ready. You want to punch a hole in the middle of each biscuit with the top of that empty beer bottle to make a donut shape. It’s easiest if you have the biscuit on a flat surface and then just push down with the beer bottle until it goes all the way through the dough.

You can really only make 3-4 biscuits at a time as you need to be constantly watching them and flipping them. Getting the right temperature of the fire can be tricky… you don’t want it too hot as they can easily burn but you also don’t want them to take forever because you are hungry. You want to brown each side and then also the sides around the biscuit too. That’s why cooking only a few at a time is helpful because you will want to hold the biscuits on their sides with the tongs to brown every part of the donut.

Next comes the fun part! With all the cinnamon and sugar you want, add that to the paper bag and then shake shake shake ! Make sure you shake that donut well to cover it with the most cinnamon-sugar goodness possible.

These donuts are kind of like an elephant ear at a carnival and they always taste SO amazing when camping. I am hungry for them right now…. drool.

I made this Valentines heart wreath the other day and though it didn't turn out how I envisioned it, it didn't cost anything for me to make it! I already had this Dollar Tree heart wreath form and lots of scrap fabric. I just tied pieces of fabric all around the heart frame until all the metal was covered. I also used some yarn, ribbon, and decorative trim to fill in the empty spaces when I ran out of fabric.
It went a bit more shabby chic/farmhouse than I intended because of the color palette, but I still love it❤
Homemade decorations are always my favorite anyways.

In a modern world where all of these things seem threatened, I sometimes feel a heavy burden of raising a son who may need to fight for these values and freedoms as he gets older.Our country seems to be falling apart and some days I am just too overwhelmed by it all. It has really hit me these past couple of months that I have a very important job as a homeschooling mother. Raising and teaching him to be Christ-like and to always show patience and kindness to others. How to sort through all the information and recognize fact from fiction. How to stand strong for what is right. And to not judge others. It can be difficult to spread love and light when there is so much darkness. But as a sweet 8 year old boy, he only sees light. Which makes the days beautiful and easier for me to see the good in every moment. 
His wanting to help those less fortunate shines this brilliant light from him that makes me so proud. I am often so wrapped up in my own life and problems that I don't think of the strangers struggling to put food in their children's bellies. Liam has often mentioned in prayer that he hopes everyone has eaten for the day. 
It makes me stop dead in my tracks and I am humbled by it.

The sun was shining through the trees and the smell of pine and wet branches was therapeutic. I snowshoed and Liam sled down the hill over and over again. Now we're back inside with hot cocoa in our bellies and ready for a nap.
