Cinnamon Applesauce Muffins

With Mornings still chilly here in Denver I decided to do a little baking with the kids ! I wanted to use up some of this giant jar of applesauce I had and wanted a more “healthy” option. These are not light and fluffy muffins , they are more of a dense muffin that are super wholesome and filling. I think they are perfect for breakfast ! Using ingredients like whole wheat flour and chia seeds make these a delicious and easy breakfast or snack option that you don’t have to feel too  guilty about !

Just like many recipes , this is one that you can really add and take away ingredients pretty easily . Adding some veggies or fruits to these would be delicious and I’m thinking next time adding some zucchini ?!

Cinnamon Applesauce Muffins

Ingredients

  • 1 3/4 C whole wheat flour
  • 1/2 C sugar
  • 1 1/2 tsp cinnamon you can add a little more if you love cinnamon
  • 1/2 C applesauce + 1-2 Tbs more
  • 1/2 C milk
  • 2 Tbs oil
  • 1 egg
  • 1 Tbs chia seeds

Instructions

  1. Preheat oven to 400 degrees and spray muffin pan with cooking spray.

    In a large bowl combine flour , sugar, baking soda and cinnamon.

    Add applesauce , a slightly beatened egg , milk and oil and mix just until all dry ingredients are moist. Sprinkle in the chia seeds

    Spoon the batter into the muffin pans about 3/4 of the way full (it will be quite thick)

    Bake at 400 degrees for 20 minutes

    Remove them from the pan after just a few minutes

    Dust powdered sugar on top and enjoy !

 

So there is sugar and oil and an egg … it’s not THE healthiest muffin recipe I make but I just really love how filling they are ! Plus they are very kid-friendly . It is an easy recipe that they can help you bake and then they LOVE dusting that powdered sugar on top ! No powdered sugar ? My son drizzled some local honey on top of his and it was DELICIOUS! They also aren’t the “prettiest” right ? But oh well !  I still wanted to share this recipe because we ate all 12 of them in one sitting and then the kids were asking if we could make more!

This cinnamon applesauce muffin recipe is far from perfect but I will be continuing to work at it and adding more nutrient rich ingredients and getting it just right !

      Thanks Anna ! It is so easy to add some baby puree in there too for extra nutrients! I add butternut squash, spinach, cauliflower… my son never knows ! haha

    OMG those look sooooo yummy – AND healthy! Have you tried replacing the egg w/plain yogurt, and/or the little bit of oil with flax seed? Those are the only two hacks I can think of to get rid of those ingredients/make it even healthier – but since we have no allergies to egg around here and the oil amount is so tiny, I’m not going to let that bother me!

For #mtnwildstorytime last week we read through Be For #mtnwildstorytime last week we read through Berenstein Bears St. Patrick's Day and made this cute rainbow craft inspired by @homeschool4me 🌈 🍀 
I used my paper cutter to cut strips of construction paper and drew out a cauldron on black construction paper for Liam to cut out. He glued each strip of paper together to make a paper chain and then glued the "gold coins" on to the cauldron. I used my large hole punch to make cutting all those yellow circles out a breeze. 
We have ours hanging over our little seasonal table setup and I just love any craft that is a rainbow 😁
I have a couple more fun and simple St. Patty's Day activities to squeeze in before all that Easter content starts taking over my feed! 😃

Now that I am back to a bit more energy and feelin Now that I am back to a bit more energy and feeling more like myself these days (1st trimester I could have slept 3 days at a time) and the temps are warming up and the sun is shining... our favorite days are the ones we get our lessons done early and spend the afternoons exploring. 
Liam, like most children, just belong spending their days in nature. He asks more questions about a rock he found or why pinecones are different shapes, or why the ducks on the river have bright orange feet. And to be honest, most of the time I don't have answers to his questions, so I'll look it up and learn right alongside him. 
Homeschooling was rough there for awhile during the cold winter months. But now that Spring is getting closer and we can spend more time outside, I am falling in love with Homeschooling all over again.

Today was a fun (and tasty) math lesson! We are le Today was a fun (and tasty) math lesson! We are learning measurements, so we baked these banana nut muffins this morning. I used a recipe from the Eating For Pregnancy cookbook (#gifted) and cannot wait to try more recipes-these turned out SO good🙌
Tomorrow we are making strawberry-banana N'ice Cream from the book, and next is a green smoothie recipe that will be perfect for St. Patty's Day. 
What makes this cookbook different from anything else I have seen, is that it's also a nutrition book, specifically for pregnant women. It covers baby's development and mom's health month by month. There are also tips on how to alter each recipe if you are diabetic and at the top of each recipe will label if it's gluten-free, dairy-free, vegan, or low-carb. This book is PACKED full of information on what vitamins we need, what to avoid eating during pregnancy, and lots of tips on general pregnancy health.
Towards the back of the book there are menu ideas for pregnancy from breakfast to dinner for a whole week. Looking through this, I know I really need to change my eating habits. 😬 I crave chips, sweets, and noodles pretty much every single day.🙈 Candy has been my weakness, and I know I need to make healthier food choices. This book is hopefully going to help me get back to healthy eating 🤞
I like that there's a good mix of breakfast, lunch, dinner, snacks, and desserts in here, too. I cannot completely give up the sweets, lets be real😆 But when it's made of fruits and nutrient-dense ingredients, I can feel a whole lot better about it.

The highlight of our weekend was definitely being The highlight of our weekend was definitely being able to snuggle and bottle feed these baby lambs❤
They were only a couple days old and so incredibly sweet! Some day we hope to have our own, but for now we will get our baby animal snuggles in at my in-laws.
