Apple Banana Crumble Oatmeal

With some mornings during the week crazy hectic, I like to take my time getting the day started on the weekends. A big wholesome breakfast is my first step! (Well, after I have had my coffee, of course). Slowing down and having breakfast with the family is my favorite way to be present and enjoy those cozy winter mornings.

I have revamped my apple banana crumble oatmeal and wanted to share with you all my delicious oatmeal recipe! Perfect for cold winter mornings, this hearty breakfast will fill you up and make your kitchen smell amazing.

My favorite oats are the Bob’s Red Mill Extra Thick Rolled Oats. TIP: Using a browned banana works best, the softer it is, the easier it is to mash into the oats

Add the almond milk and water to a medium size pan.

While the milk and water are being heated on medium, cut up half an apple (or more) into tiny pieces

Once the water and milk have come to a boil you can add the oats, apple pieces and the banana to the pan.

Mash the banana into the mixture and stir well.

Let that simmer on medium-low about 20-25 minutes or so (less time if you want your oatmeal more watery).

Now you can start making the crumble while the oats mixture cooks.

Add the flour, brown sugar and cinnamon into a separate bowl and stir to combine.

Melt the butter in a small glass bowl in the microwave for 20-30 seconds. (Be careful when taking that bowl out of the microwave!)

Drizzle the melted butter over the flour mixture and using a whisk or fork, combine the mixture.

The crumble will be chunky and start to clump together. You can break it up into finer pieces with the whisk or keep the clumps larger.

Once your oats are done cooking, you can scoop a generous amount of the oats into a small bowl and pile on that crumble topping.

I like to add a couple thin slices of apple on top and sometimes an extra sprinkle of cinnamon.

Ingredients

  • 1 Banana
  • 1 C Water
  • 1 C Almond milk
  • 1 Apple
  • 1/2 C Rolled oats

  • 1 C Flour
  • 1/4 C Brown sugar
  • 4 Tbs Butter
  • 1/2-1 tsp Cinnamon

Instructions

  4. Mash the banana into the mixture and stir well

  6. While those oats are cooking you can prep that delicious crumble

For the crumble topping

  1. In a separate bowl, add the flour, brown sugar and cinnamon

  2. Melt the butter in the microwave in a small glass bowl (I do 20-30 seconds at a time and stir until it is almost completely melted)

  3. Add the butter to the flour mixture and using a fork or whisk mix together

The warm oatmeal with the cool crisp apple slices is the perfect combo!

This makes enough oatmeal for me and my son to share plus there is always extra of the crumble topping so I usually just cover the bowl of topping with aluminum foil or plastic wrap and throw it into the fridge for the next day! This crumble is great on top of yogurt too! It keeps for a few days in the fridge.

    As sad as it sounds, I haven’t made oatmeal in over a year. My kids won’t eat it. Maybe if I took the time to cook it this way, they would gobble it up. Thanks for a great new recipe.

    The crumble is always my favorite part. It doesn’t matter if it’s on top of a cobbler, on ice cream, or on oats, its the hint of crunch that makes food so tasty. I cannot wait to make this recipe over the weekend.

I made this Valentines heart wreath the other day and though it didn't turn out how I envisioned it, it didn't cost anything for me to make it! I already had this Dollar Tree heart wreath form and lots of scrap fabric. I just tied pieces of fabric all around the heart frame until all the metal was covered. I also used some yarn, ribbon, and decorative trim to fill in the empty spaces when I ran out of fabric.
It went a bit more shabby chic/farmhouse than I intended because of the color palette, but I still love it❤
Homemade decorations are always my favorite anyways. 
Do you make your own decorations for the different holidays ? 
I have a few more simple DIYs planned for Valentines Day and can't wait to share them with you !

It may be winter outside, (and for another 2-3 months) but inside I am freshening up each room, trying to shop my home to switch out pieces, and dreaming of the day we can open the windows to get some fresh air in here. 
I have made yet another big pile of donations and I am just amazed that in the 2 years we have lived in this house, I have accumulated so much STUFF. I've been purging and organizing room by room on a zero $ budget. It's been tricky without the proper baskets and shelves to contain it all, but I'm getting there. Anyone else in the mood to purge and organize it all ?

In a modern world where all of these things seem threatened, I sometimes feel a heavy burden of raising a son who may need to fight for these values and freedoms as he gets older.Our country seems to be falling apart and some days I am just too overwhelmed by it all. It has really hit me these past couple of months that I have a very important job as a homeschooling mother. Raising and teaching him to be Christ-like and to always show patience and kindness to others. How to sort through all the information and recognize fact from fiction. How to stand strong for what is right. And to not judge others. It can be difficult to spread love and light when there is so much darkness. But as a sweet 8 year old boy, he only sees light. Which makes the days beautiful and easier for me to see the good in every moment. 
His wanting to help those less fortunate shines this brilliant light from him that makes me so proud. I am often so wrapped up in my own life and problems that I don't think of the strangers struggling to put food in their children's bellies. Liam has often mentioned in prayer that he hopes everyone has eaten for the day. 
It makes me stop dead in my tracks and I am humbled by it.

The sun was shining through the trees and the smell of pine and wet branches was therapeutic. I snowshoed and Liam sled down the hill over and over again. Now we're back inside with hot cocoa in our bellies and ready for a nap.
