
I have been making these raspberry almond mini muffins for about 10 years now. My mom and I made these every Easter and now I make them for Easter and throughout the Spring and Summer months. They are incredibly easy to make and so delicious. I often get asked for this recipe so I wanted to share it with all of you!
Mom's Raspberry Almond Mini Muffins
Ingredients
- 2 C flour
- 2.3 C sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/2 C butter melted (1 stick)
- 2/3 C milk
- 1 egg
- 3/4 tsp pure almond extract
- 1/4 C raspberry preserves
- powdered sugar
Instructions

Preheat oven to 400 degrees

Combine flour, sugar, baking powder, salt and cinnamon in a large bowl.

Add melted butter, egg, milk, and almond extract to dry ingredients.

Stir well until combined.

Spray mini muffin pans with cooking spray.

Scoop about 1 Tbs of batter into each muffin pan and make an indent with your finger in the batter. ( Spray your finger with cooking spray so the batter does not stick to you!)

Press about 1/2 tsp raspberry presses into top of batter.

Gently fold batter over most of the preserves.

Bake 12-14 minutes or unto golden brown.

Cool in pan for 5 minutes.

Once cool, dust powdered sugar just before serving.

My favorite raspberry preserves to use is the [amazon_textlink asin=’B0004MTM9O’ text=’Bonne Maman’ template=’ProductLink’ store=’Newmommasurvival’ marketplace=’US’ link_id=’d56d403c-3b71-11e8-b69c-692da6c7dc22′] brand. You can make these two days before you need them and they will still be rather fresh. But of course, nothing beats them fresh out of the oven! Remember to wait to dust them with powdered sugar just until you are about to serve them.

I’m not really fan of raspberry but these look like heaven! I love how you have passed this tradition of making these with your girls. I always loved cooking with my grandma and I love making a few of the ones I grew up with with my girls.
